In our new fine dining restaurant “Ghosts”, you are invited to experience the very best in innovative cuisine by one of Muskoka’s greatest chef’s, Winston Hugh trained at the Harvard of chef schools "Culinary Institute of America", fresh from Toronto's infamous King Street restaurant "Monsoon"!
Enjoy a congruous mix of bistro, Italian and North American cuisine; our contemporary a la carte menu features innovative dishes that highlight local producer’s ingredients. Savour Pan seared scallops, tiger prawns on asian slaw with wasabi mayo, beef tenderloin and chevre with Portobello jus, Atlantic salmon with roasted root vegetables and roasted fennel and our famous apple croustade…… these are only a few of the many selections to entice your senses.
The redesign of the Bala Bay continues with the resurrection of the hotels original dining room. Refinished hardwood floors and sparkling chandeliers combine with mirror and opaque lit paneling to produce a decidedly refreshing, clean atmosphere. Ethereal panels of white organza, hanging from the sixteen foot tin ceilings can be drawn around tables, allowing for more discreet dining. Easy Bossa Nova guitar evokes a tropical isle feel and ambiance.

If romance is in the air, dine at secluded banquets in the Lux Lounge porch, where low amber lighting and deep amethyst suede are reminiscent of your parent’s rec room - circa 1972 (minus the parents). This has all been recently renovated in 2007
